Sfogliatelle

Sfogliatelle are Italian pastries. Sfogliatelle means many leaves or layers. Look at the picture to see all the layers. The dough is rolled out very thin and generously covered with rendered pork fat. Today lard is commonly used; some people even substitute margarine. The dough is rolled up, creating the layers. This then looks somewhat like a jelly roll. The roll is sliced and a filling placed in the center of each slice. The dough is shaped to cover the filling. Orange-flavored ricotta is the most common filling, but you can find recipes with fillings include lemon zest, candied orange bits, and cinnamon too. The layers of dough separate during baking, creating the ridges in the photo. There are many varieties of sfogliatelle in Italy and abroad. Many Italian bakeries make sfogliatelle, but do not always have them due to the amount of time they require to make. Sfogliatelle originally come from Naples, but you can find them all over the world now.
